Zucchini Shrimp Stir Fry

Saute Minced Garlic in butter or oil with chopped (or spiralized) zucchini and finely diced celery until tender. Add fresh tomatoes, peeled shrimp, and parsley. Cook until shrimp are pink. Salt and pepper to taste.

1 ½ lb. shrimp

3 cloves garlic

6 cups chopped or spiralized zucchini

2 stalks celery

2 medium tomatoes diced or chopped

2 T fresh parsley

3 T olive oil or butter

Zesty Sweet Potato Side

For a yummy side dish, cook a sweet potato until it is soft and well-done (about 10 minutes in the microwave). Cut in half  and top with two tablespoons of salsa and ¼ cup of nonfat yogurt.

Guilt Free Corn on the Cob

For sweet corn on the cob without the butter, try a generous squeeze of fresh lime juice, a shake of chili powder and/or chopped fresh cilantro.
